Ingredients:
2 oz. unsweetened chocolate
3 eggs (or vegan egg substitute)
2 cups white sugar
1 cup oil
2 cups grated zucchini (about 3 medium zucchinis)
1 tsp vanilla extract
2 cups all-purpose flour (or 2 cups almond flour for a gluten-free, higher protein version)
1 tsp baking soda
1 tsp salt
1 tsp ground cinnamon
¾ cup semi-sweet chocolate chips
Optional: 1/2 cup walnuts
Directions:
Preheat the oven to 350 degrees Fahrenheit. Grease two 9"x5" loaf pans.
Melt unsweetened chocolate in the microwave until smooth. Melt the chocolate in 30 second increments, stirring at each interval. Let cool slightly.
In a large bowl, combine your eggs, melted chocolate, sugar, oil, zucchini, and vanilla extract.Â
Stir in the flour, baking soda, salt, and cinnamon. After this is combined, fold in chocolate chips.Â
Pour the batter into the two pans evenly.
